Just when I started to worry that I missed peach season… we went to a farmers market and discovered that it’s here in all its glory! I like to support organic orchards and struck gold with a bag of fruit from the ELA Family Farms stand at a market near downtown Denver. (What a fool I was to get a small bag – heading back ASAP for more!)
Peaches can be… temperamental. It seems like there’s just a 5-minute window when they’re perfectly ripe. Miss it, and they’re spoiled! (Note: squishy-but-not-yet-spoiled peaches are a nice addition to smoothies!) I saved half of our peach haul for eating plain, then used 1-1/4 pounds for Martha Stewart Peach-Pie Crumble Bars. They were a little thick and messy for a bar, but very good. The peach flavor held its own against the buttery crust and crumble topping.

Enjoy them on warm, flaky biscuits as peach butter.
Go classic summer comfort food in a peach pie.
Have them for breakfast in peach scones.
Turn them into peach ice cream.
Freeze them to enjoy in a few weeks when the fresh local produce of summer is but a sweet memory. ( I read that they’ll keep in the freezer up to twelve months!)
